Yancey's BlueBerry Farm A 20 acre Blueberry Farm and plant nursery. The blueberry season starts in late March and runs through the first part of May. Already picked berries are $5/lb.

During the blueberry season the Farm has you-pick blueberries for $4/lb.

🫐 Blueberry Greek Yogurt Cake 🍰

Ingredients:
- 1 cup all-purpose flour, sifted
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 2 oz unsalted butter, softened
- 2/3 cup sugar
- 1/2 teaspoon pure vanilla extract
- 1 large egg
- 1/2 cup Greek yogurt
- 1 cup blueberries

Instructions:
1. Preheat the oven to 375°F (190°C) with the rack in the middle. Line the bottom of a 9x3-inch springform pan (or 9-inch round cake pan) with parchment paper. Grease the sides of the pan with butter or cooking spray.

2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.

3. In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the vanilla extract and egg, and continue beating until very creamy and light in color.

4. With the mixer speed on low, gradually mix in the flour mixture in 2 batches, alternating with adding 1/2 cup of Greek yogurt between the batches, until combined. Be careful not to overmix.

5. Transfer the cake batter to the prepared springform pan. Scatter the blueberries evenly on top.

6. Bake until the cake turns golden and a tester inserted into the center comes out clean, about 20 to 35 minutes, depending on your oven.

7. Once the cake is done baking, let it cool in the pan on a wire rack for about 40 minutes. Then, release the cake from the springform pan. If using a round cake pan, invert the cake onto a plate after baking for about 30-40 minutes.

8. Serve and enjoy this delicious Blueberry Greek Yogurt Cake!
