We make artisan cheeses in the traditional Italian style, developed through years of study and training with master cheesemakers in Italy. This means we use no vinegar or citric acid in our production and all of our cheeses are naturally cultured. We are committed to exclusively sourcing our milk from local, family dairy farms. Our goal is to pay a premium for the milk they produce to create a mor

e sustainable, local dairy economy. In turn, these dairies produce a higher quality, cleaner milk, that allows us to produce a higher quality cheese. All of our farm partners are Animal-Welfare Approved, providing non-GMO feed with access to pasture when available.

Ricotta Salata, or Vecchio, starts with a whey-based ricotta that’s pressed, salted, and aged for at least six weeks. The cheese team carefully monitors each wheel to ensure proper rind development, making this a uniquely well-tended cheese.

Thanks to local milk, Vecchio is richer in moisture than traditional Ricotta Salata, allowing it to develop a special rind typically seen only in southern Sicily. The cheese has a firm texture and a complex flavor profile—salty with a hint of sweetness, a custardy aroma, and a funky blue rind that adds earthy notes.

Often used as a substitute for Parmigiano Reggiano in southern Italy, this versatile cheese can be grated, sliced, or used as a filling in pasta. It's perfect for topping dishes like fresh tomatoes with balsamic and basil, adding to eggs, or serving on a cheeseboard with honey. Vecchio is a must-have for any kitchen!

SMOKED BIGHILL CIDERWORKS MULLED CIDER CHEESE
It all started with a chance reunion of our company owners at a local festival. Though the Caputos met Ben years ago when the creamery was just getting started, our paths hadn't crossed in a few years. As we talked through surviving COVID and the difficulties of running small family businesses while trying to raise our families, an idea started to form. What if we put our cheese together with Big Hill's Standard Cider? By Monday of the following week, we had some hard cider on hand and the cheesemaking team got busy making scratch batches of what would become our next great cheese!

We start by mulling the hard cider with sticks of cinnamon, whole cloves, and nutmeg, before washing our gouda-style cheese curds. After the aging process is completed in our caves, we put the wheels into the smoker for a long, cool, infusion of applewood smoke.

The resulting flavor is all things sweet, creamy, salty, and smokey! We think it is the perfect addition to any celebration and a great representation of all Central Pennsylvania has to offer. We think it pairs perfectly with any seasonal hard cider, but of course, we will be eating ours with a Big Hill Ciderworks in hand...and we hope you will too!

While the red wax-coated Gouda you see in supermarkets is iconic, "Gouda" actually refers to a style of cheesemaking. This particular Gouda-style cheese is made using a "washed curd" process, where the curds are washed with water to remove excess lactose, resulting in a sweeter, milder flavor. After being pressed into a round mold and brined for 3 days, it is aged for a few weeks.
"The Giving Gouda" was created in late 2020 as part of a charitable initiative to support the Central Pennsylvania Food Bank. For every pound of cheese purchased online, a pound of Gouda was donated. Thanks to generous customers, over 13,500 pounds of cheese were donated to the food bank.

Provolone, meaning "big, aged mozzarella" in Italian, is made by stretching naturally fermented curds by hand and shaping them into a traditional tubular form. After cooling, the cheese is aged in brine for about 6 months. As it ages, it loses moisture, developing a firm texture with a slight grit (similar to young Parmigiano Reggiano) and a sharp, nutty flavor. The more mature version, *Riserva*, is a refined sibling of Provola, perfect for slicing on a cheeseboard with spicy cured meats and jams, or for grating onto pizza and pasta.
