Bringing the flavors of Korea to the kitchen with this delicious Bibimbap, thanks to local Chicago vendor 's Kitchen 🥢 Packed with marinated beef, fresh veggies & crispy rice perfection. Who’s ready to dig in?
Ingredients:
1/2 lb. beef tenderloin or flank steak
2-3 tablespoons Ying’s Korean BBQ Marinade, divided
2-3 tablespoons Ying’s Noodle Sauce
1 bunch fresh spinach
2 cups bean sprouts
2-3 tablespoons oil, divided
1-2 cloves garlic, minced
3-4 mushrooms, sliced
1/3 cup julienned zucchini
1/3 cup julienned carrot
½ cup sliced red bell pepper
1/2 cup thinly sliced red onion
2 eggs
2 teaspoons sesame oil (optional)
3-4 cups cooked short grain rice
2 teaspoons sesame seeds
Instructions:
- Cut steak into thin strips, marinate with 1 tablespoon of Ying's Korean BBQ Marinade.
- Bibimbap Sauce: In a small bowl mix 1 tablespoon Ying's Korean BBQ Marinade with Ying’s Spicy Noodle Sauce. Mix well and set aside.
- Boil 3 cups of water in a pot, blanch bean sprouts until they are a little limp. Remove from the pot and rinse in cold water and squeeze out excess water.
- Then blanch spinach until they are limp. Remove from the pot and rinse in cold water, then squeeze out excess water. Then cut spinach in 1 ½”.
- Heat 1 tablespoon of oil, add garlic and marinated steak. Stir Fry until it's done. Remove from the pan.
- Heat 1 teaspoon sesame oil, add sliced mushrooms and stir fry for a few seconds. Remove and set aside. Repeat the same with zucchini, carrots, bell pepper, red onion. Please cook them individually.
- Heat the remaining oil in a wok or pan. Crack an egg in and cook until edges are browned and doneness you desire. Do the same with the other egg.
- In a stone, clay ware (you could use cast iron pot for more servings), add 1 teaspoon sesame oil or any other oil, swirl to cover the bottom, add a layer of the rice (1 1/2-2 cups ), then arrange cooked meat and vegetables. Try to alternate the vegetables by color.
- Top with a cooked egg. Place the pot on low heat and cook until you hear a crackling sound (this will create a layer of crispy rice on the bottom of the pot).
- Remove carefully, top with Bibimbap Sauce and sprinkle sesame seeds. Mix well and enjoy!
