Ingredients:

For the Pineapple Slush:

2 cups frozen pineapple chunks
1 cup pineapple juice or water
1 tablespoon honey (optional)

Instructions:

Cheddar Bacon Chicken Tenders
Ingredients:

1 egg
1/2 cup plain panko bread crumbs
1/2 cup finely shredded Cheddar cheese
3 oz cooked bacon bits or pieces
14 oz uncooked chicken tenders
Chive and onion sour cream potato topper (optional)
Directions:

Preheat Oven: Preheat your oven to 400°F (204°C). Spray a large cookie sheet with cooking spray.
Prepare Breading: In a shallow bowl, beat the egg. In a large resealable plastic bag, combine the panko bread crumbs, shredded Cheddar cheese, and bacon bits.
Coat Chicken: Dip each chicken tender into the beaten egg, then place all tenders in the bread crumb bag. Seal the bag and shake to coat the tenders evenly.

Ingredients:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips, melted and slightly cooled
- 1 cup fresh strawberries, pureed
- 2 tablespoons granulated sugar

Instructions:
1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth and creamy.
4. Add the vanilla extract and mix well.
5. Add the eggs, one at a time, beating well after each addition.
6. Blend in the sour cream and heavy cream until the mixture is smooth.

Ingredients:

2 cups pretzels, crushed
1 cup unsalted butter, melted
1/2 cup packed brown sugar

1/2 cup caramel sauce
Sea salt, for sprinkling

Directions:
Line a 9x13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.

Ingredients:
3 cups all-purpose flour
3 cloves garlic, minced
1 tablespoon finely chopped fresh rosemary, or more, to taste
1 ¼ teaspoons kosher salt
¾ teaspoon freshly ground black pepper
½ teaspoon instant yeast
1 ½ cups water, at room temperature
2 tablespoons cornmeal
Directions:
In a large bowl, combine flour, garlic, rosemary, salt, pepper, and yeast.
Using a wooden spoon or your hand, add water and mix until a wet, sticky dough forms, about 30 seconds.
Cover the bowl tightly with plastic wrap and let stand at room temperature until the surface is dotted with bubbles, about 18 to 24 hours.
Lightly oil a 10-inch cast iron skillet or coat with nonstick spray; sprinkle with cornmeal.
Working on a lightly floured surface, gently shape the dough into a round.

Ingredients:

Tennessee Onions

Better than Onion Rings

Ingredients:

3-4 Vidalia sweet onions
4 tablespoons unsalted butter
1 teaspoon salt (adjust according to preference)
1 teaspoon garlic powder
1/2 teaspoon oregano
1 cup Italian blend cheese, finely shredded
1 cup cheddar cheese, finely shredded
1/2 cup Parmesan cheese, finely shredded
Directions:

Preheat your oven to 350°F (175°C).
Coat a 9×13-inch baking dish with non-stick cooking spray.
Clean and peel the Vidalia sweet onions. Slice them into rounds approximately ¼ inch thick, but do not separate the rounds into individual onion rings.

Ingredients:
For the Pasta:
8 ounces whole-wheat spaghetti (or your preferred type)
4 cups fresh spinach leaves
For the Sauce:
1/2 cup oil-packed sun-dried tomatoes, drained and chopped (reserve some oil)
1 small red onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
Salt and pepper to taste
1 cup low-sodium vegetable or chicken broth
1/2 cup sour cream
1/2 cup grated Parmesan cheese
2 tablespoons butter
Directions:

Healthy Steak Fajita Roll-Ups
Ingredients:

For the steak roll-ups:

1 lb. thinly sliced sirloin steak, pounded thin, cut into 1"x3" strips
2 Tbsp avocado or olive oil, divided
3 bell peppers (different colors), cut into thin strips
1 large yellow onion, sliced into strips
2-3 green onions, green parts sliced
Fresh parsley or cilantro, chopped
For the fajita seasoning:

1 tsp chili powder
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp ground black pepper
Instructions:

Whisk all fajita seasoning ingredients in a small bowl.
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Add onions and bell peppers, season with half the fajita seasoning, and cook for 3-4 minutes until crisp-tender.
Remove peppers and onions from the pan and set aside.
Lay steak strips on a cutting board, sprinkle with remaining seasoning, and top with peppers and onions. Roll up and secure with toothpicks.
Heat the remaining oil in the skillet over medium-high heat.
Cook steak roll-ups for about 2 minutes per side until golden brown.
Sprinkle with parsley/cilantro and green onions. Enjoy while hot!

Ingredients:

1 can refrigerated pizza dough
1/2 cup pizza sauce
1 cup shredded mozzarella cheese

🍓 LAYERED SUMMER FRUIT SALAD 🍓

Ingredients:
2 cups of sliced strawberries
2 cups of blueberries
2 cups of raspberries
2 cups of peeled and sliced kiwi
2 cups of peeled and segmented mandarin oranges
2 cups of sliced bananas
2 cups of diced pineapple
2 cups of halved grapes
1/4 cup of fresh mint leaves
1 cup of vanilla yogurt (optional)
1 tablespoon of honey (optional)
Directions:
In a large glass trifle bowl or serving dish, begin by layering the fruit.
Start with a layer of sliced bananas at the bottom.
Add a layer of pineapple, then strawberries, kiwi, blueberries, mandarin oranges, raspberries, and grapes.
Repeat the layers until all the fruit is used, creating a colorful, layered look.
If desired, drizzle honey over the top and add a dollop of vanilla yogurt.
Garnish with fresh mint leaves and a few whole strawberries on top.
Chill in the refrigerator for about 30 minutes before serving to let the flavors meld.
