Pastry Camp: Day 1 I am taking my fall/Thanksgiving break in my own commercial kitchen to finally practice some pastry skills with the Sheeter. The sheeter is something that reminds me of a story in Stephen King’s, Night Shift. I started out today with a short tutorial on the sheeter from and was able to roll some nice pie dough as my first practice. This is my favorite recipe for savory or sweet https://tartinebakery.com/stories/holiday-pie. More tomorrow as I try laminated dough. (The cookies are Soft Barley Sugar Cookies— I finally found the recipe my grandmother made! http://fortheloveofbread.blogspot.com/2011/04/week-of-whole-grain-baking-day-8-soft.html)

Beard Trim! A hazard of w**d mitigation is getting burrs in one’s fur. While W***y had an impressive dreadlocked goatee, it had to go for his own comfort. Apparently however, there was a complaint lodged about the final look.

The haul from the Tunnel of Squash. From right to left: Kakai pumpkins (for pepitas),small decoratives, Delicata squash (best savory)middle front, Pink Banana squash (best for pies and sweet breads)middle back, and then more Kakai on far left. It’s a squash-rific fall!

The summer after I bought the farm, I spent a summer in Italy working on small farms. I would wander into the the local towns to pick up snacks such as cheese, or a coffee and pastry. Did you know we have that same resource in Wheat Ridge? Today I picked up some cheese, humanely- raised calabrase and prosciutto, olives, and a mini Sfogliatelle! And you can get to-go items like subs and sausage rolls AND hard-to-find “OO” flour for the best homemade pizza crust! Support local!
