Memorial Day weekend gives us an opportunity to remember those who had given their all so that we could enjoy the freedoms that sometimes we take for granted. It also marked the start of Summer and BBQ season.

With that thought we'd like to share a re-post of our favorite blackberry BBQ sauce recipes in hopes that we can give you some BBQ inspiration with blackberries picked from our farm!

BLACKBERRY BBQ SAUCE

Recipe Note: This sauce is great on poultry and pork but burns easily so it is best brushed on the meat in the final moments of cooking and then generously slathered on just before serving.

Servings Per Recipe: 12
Total Prep Time: 10 Minutes
Total Cook Time: 50 Minutes

Ingredients:
2 Cups Fresh Blackberries
1/4 Cups Sugar
1 Tablespoon Unsalted Butter
1/2 Vidalia or Other Sweet Onion, Finely Chopped
2 Cloves of Garlic, Finely Chopped
1 Jalapeno Pepper, Seed and Finely Chopped
6 Tablespoons of Tomato Paste
2/3 Cup of Strong Brewed Coffee
1/4 Cup Sorghum
1/4 Cup Cider Vinegar
2 Tablespoons Balsamic Vinegar
2 Tablespoons Worcestershire Sauce
1 1/2 Teaspoons Soy Sauce
1 Tablespoon Chili Powder

Directions:
Step 1: Place the blackberries, 1/4 cup of water, and the sugar in a blender and puree. Strain through a fine mesh strainer into a medium bowl. Press on the solids in the strainer with a wooden spoon to extract as much of the juice and pulp from the blackberries as possible; you should have 1/2 cup of puree. Set aside.
Step 2: Place a medium sauce pan over medium heat and add the butter. When the butter starts to bubble, add the onion and cook, stirring occasionally, for 10 to 12 minutes until golden brown. If the onions begins to stick or brown too quickly, add a tablespoon of water.
Step 3: Add the garlic and jalapeno pepper and cook, stirring for 30 seconds. Add the tomato paste and continue to stir for 2 to 3 minutes more until the paste turns brick red. Stir the blackberry puree, coffee, sorghum, cider, vinegar, balsamic vinegar, Worcestershire sauce, soy sauce, chili powder, and 2 tablespoons water. Bring the mixture to a boil, lower the heat, and simmer for 30 minutes, stirring occasionally.
Step 4: Strain the sauce through a fine mesh strainer, pressing down hard with a spoon to extract as much liquid as possible. Discard the solids. Cool to room temperature before serving.

ยผ Cup White Wine
3 Tablespoons Granulated White Sugar
3 Tablespoons Cold, Unsalted Butter

Blackberry Basics

Pick-Your-Own: Look for berries that are plump and black. A gentle tug should release the blackberry from the stem. Some varieties are not fully ripe until they lose their shininess and become dull, while others are still shiny but quite soft when fully ripe. Try a few to help you learn to gauge ripeness.

Care and handling: Handle blackberries carefully; they are fragile. Transfer between containers as little as possible. Keep them cool on the way home and refrigerate promptly. Store them in the refrigerator, loosely covered. Use within 3-4 days.

Washing: Only wash just before using. Pour a shallow layer of berries into a colander, swirl gently in a pan of water, and rinse under a gentle stream of water. To dry thoroughly, pour only towels. Before using or freezing, pick through berries to remove immature or damaged berries, leaves and stems.

Freezing: Simply put dry, whole blackberries can be frozen in a plastic freezer bag. It's best to wash them in a bowl with a little salt or white vinegar, rinse them well and then spread the blackberries on a tray or cookie sheet prior to freezing them. Once frozen, place them into freezer bags or containers. Use within 4 to 5 months. To preserve flavor longer, mix in about 1/4 cup sugar per quart of berries before freezing.

Measuring:
1 Cup Blackberries = about 140 grams (.3 pounds)
1 Quart Blackberries = 4 Cups = 1 1/2 pound

We opened our u-pick season on Saturday, April 20th and will be running through the end of June. We currently have all of varieties available for picking including Freedom, Osage and Ponca. We started with the Freedoms and only have another week to 10 days left on them. Osage and Ponca will be available through the end of June.

BLACKBERRY SCONES WITH LEMON GLAZE

Servings Per Recipe: 8
Total Prep Time: 20 Minutes
Total Cook Time: 25 Minutes
Total Time: 45 Minutes

Ingredients:
2-1/4 Cups All-Purpose Flour
1/2 Cup Sugar
1/2 Tbsp Baking Powder
Pinch of Salt
1/2 Cup Heavy Cream
1/2 Cup Cold, Unsalted Butter
1 Egg
1-1/2 Cups Fresh Blackberries
1 Tsp Lemon Zest

Ingredients for Lemon Glaze:
1 Tbsp Lemon Juice
1 Tsp Lemon Zest
1 Cup Powdered Sugar
1/4 Cup Milk
2 Tbsp Butter Melted

Instructions:
Step 1: Preheat oven to 400 degrees F and line a large baking tray with a silicone mat (or baking paper).
Step 2: Whisk all-purpose flour, salt, sugar, baking powder, lemon zest together in a large bowl.
Step 3: Grate butter with a cheese grater and add to the flour mixture.

Gently use a spatula to fold in the blackberries just until the dough is well combined, but be careful not to overmix.

Lemon Glaze
Step 1: Sift the powdered sugar and then combine all of the glaze ingredients in a bowl. Stir together until smooth. If the mixture is too runny, add a touch more powdered sugar. If it is too thick, add a more milk or lemon juice.
