There are many health benefits to eating chicken we couldn't fit them all into one post so here are just a few great reasons to eat chicken:

Creamy Chicken a la king😋🍗

INGREDIENTS
CHICKEN
5 chicken breasts, sliced in small cubes
½ cup chicken stock
oil and butter

SAUCE
½ cup salted butter
2 small punnets mushrooms, washed and sliced
½ cup all-purpose flour
2 cups chicken broth
200 ml cream
1 cup red sweet pepper, chopped
1 small bunch spring onions, chopped
black pepper
frozen peas (optional)

METHOD
CHICKEN
Heat a large heavy skillet over medium-high heat.
Add one tablespoon vegetable oil and butter.
Place chicken breasts cutlets into the skillet.
Season with salt and pepper.
Sauté until light golden brown.
Add the chicken stock and cook 6 -10 minutes or until soft and done.
Set aside.

SAUCE
In a large saucepan, melt the butter over medium-high heat. Add the mushrooms and cook until the mushrooms are soft, about 5 minutes.
Add the sweet peppers and chopped spring onions.
Add the chicken broth and cook for about 15 minutes.
Add the flour and stir until there are no specks of flour left; bring to the boil.
Reduce the heat to low and simmer until the sauce has thickened, about 3 minutes.
Working quickly, slowly pour in the cream while whisking vigorously. Cook a few minutes more.
Add the cooked chicken and mix well.
Season to taste with black pepper.

One possible reason that organic free-range chickens may taste better is that they eat a higher quality diet than conventional birds. 🐛

A study published in the journal Poultry Science divided 600 chickens into three groups: those raised completely indoors, those given outdoor access with artificial shelters and those given outdoor conditions shaded by willow trees. Researchers found that the birds that had outdoor access and natural shelter had juicier, more tender and better textured meat. The researchers believe that the amount of exercise free-range chickens are able to get on a daily basis helps develop their muscles, which results in better flavor and texture.

One of the healthiest things about free-range chicken is its high protein content. 🍗

Delicious Durban Curry Recipe😋🍲

2 tablespoons ghee (or butter)
1 tablespoon vegetable oil
1 tablespoon of curry powder
1 to 2 whole cinnamon sticks
1 tablespoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of whole cumin
1 teaspoon of cayenne pepper or Paprika (or both)
1 finely chopped or grated onion
1.4cm of fresh grated ginger
4 cloves of finely chopped garlic
8 pieces of chicken (preferably on the bone for flavour)
2 chopped tomatoes or Tinned Chopped Tomatoes
1 tablespoon of tomato puree
1 sprig of curry leaves
2 potatoes (diced into half-inch cubes)

Method
1. In a heavy based pan, melt the butter in the vegetable oil, then add the spices to temper and become fragrant. Be careful not to burn the butter or the spices.

2. Add the onions, garlic and ginger and fry until softened. This normally takes about 3 minutes on a medium heat.

3. Turn the heat up to high and add the chicken pieces to brown, regularly turning into the onion and spice mixture. (Alternately you can add the chicken to the sauce, after the tomatoes are cooked down after step 4)

4. After about 5 minutes, add the tomato puree and chopped tomatoes and give the pot a good stir.

5. Throw in the diced potatoes, and curry leaves. Taste for salt, then allow to simmer for about 30 minutes on a low to medium heat. Poke the potatoes with a fork, so that they absorb the gravy.

6. When ready, garnish with the fresh coriander leaves and you are ready to serve with your accompaniments, such as sambol etc.

Note: Traditionally, this curry is serves on a bed of basmati rice but there are many ways to serve it, such as in roti, in a bunny chow or my favorite with pap.

Healthy Chicken Nuggets😋🍗

Ingredients
▢2 chicken breasts, (boneless and skinless)
▢½ cup almond flour
▢1 tablespoon Italian seasoning
▢2 tablespoon extra virgin olive oil
▢½ teaspoon salt
▢½ teaspoon pepper

Instructions
Preheat oven to 200 C. Prepare a large baking sheet with parchment paper.

In a bowl, stir together the almond flour, Italian seasoning, salt, and pepper.

Trim any fat off the chicken breasts and discard, then cut into 1-inch thick pieces.

Spray the chicken with the extra virgin olive oil.

Place each piece of chicken in the bowl of flour and toss until fully coated, then transfer the chicken to the prepared baking sheet.
Bake for 20 minutes.

Turn on the broiler and place the chicken nuggets under the broiler 3-4 minutes to make the outside crispy.

Serve with your desired sauce😁
