WHAT WE DO!

Microgreens are usually grown in soil. Seeds are spread in a tray where they germinate and then grow with light. They are grown with plenty of airflow and are harvested between 7-14 days after they have used photosynthesis to increase nutrition.

Microgreens can play a role in both sweet and savory dishes. In addition to their nutritional value, they can add flavor, texture, and color to salads and sandwiches. People can also add them to smoothies or use them as a garnish.

WHAT ARE MICROGREENS?

Microgreens (micro greens) are a tiny form of young edible greens produced from herb, vegetable or different plants. They vary in size from 2.54cm to 3.81cm long, including the leaves and stems. A Microgreen has a central stem which has been cut just above the soil line while harvesting. It has two fully developed cotyledon leaves and usually a pair very small, partially developed true leaves. The typical stem and leaf configuration for micro greens is approximately 2.54cm to 3.81cm in height. Microgreens have a surprisingly intense flavour considering their small size.

Microgreens are used as a fresh flavour ingredient primarily in restaurants serving high cuisine. These restaurants place a strong emphasis on both flavour and creative presentation of their dishes. Microgreens’ fresh appearance, delicacy add beauty to any dish.

Microgreens are the exact same seeds that are used for full sized herbs, vegetables and greens. They are seedlings that are harvested before they develop into their larger siblings.

The most common varieties of Microgreens include: Amaranth, Beets, Basil, Belle, Cabbage, Chard, Coriander, Diakon, Kohlrabi, Mustard, Parsley, Radish, Rocket and Sunflower.

THE DIFFERENCE BETWEEN SPROUTS AND MICROGREENS

The terms ‘sprouts’ and ‘microgreens’ are often confused, they are two different plant categories.

Sprouts are harvested far earlier than microgreens, between seven to ten days after germination. Sprouts do not require soil or sunlight and instead, are soaked in water, creating a lot more risk to bacteria. They consist of just seeds and stems, no leaves.

Microgreens are harvested later, anytime from 7 days up to 21 days after germination. These consist of small leaves and the stems. These, unlike the sprouts, do require light to grow.

THE HISTORY OF MICROGREENS

Microgreens were originally produced in the United States from about the mid 1990′s in Southern California, it then extended east. There were only a few varieties offered to start. Those offered were the basic varieties of Arugula, Basil, Cilantro, Beets, Kale, and a mixture called the Rainbow Mix.

Now grown in most areas throughout the world with an increasing number of varieties being produced.

Although many people are still learning about Microgreens for the first time will assume they are used in salads, they are mostly used in restaurants and growing in the healthy eating sector.
