To make an easy tomato-based pasta sauce, we follow the steps below. You can adapt to taste, and scale up or down as you see fit.

To fill 5kg bottles you will need

Ingredients:
5kg whole tomatoes (any, but paste tomatoes reduce faster)
500g fresh fresh basil (you can use dried - see note below)
2-3 large onions chopped/cut into slices
200g garlic
125ml sugar

Any additional herbs you would like to add for taste (e.g. for an Italian style seasoning, use any or all of these - oregano, rosemary, thyme)

Also optional - add diced chayote and/or brinjal or any other veg you would like.

Tip: Dried herbs can be used instead, but adjust quantities to approximately 1 teaspoon dry to one tablespoon fresh.

5-6 jam bottles

Large pot
Any form of blender that you can use to liquidise the end product - we use a stick blender.

Instructions:
Put all the tomatoes into the pot without adding any other liquids such as water or oil.
We randomly pierce the tomatoes in the pot with a wooden spoon handle or knife to allow the moisture to start the cooking process.

If you are worried about burning the tomatoes, you CAN put a little water in, but it just means more moisture to cook off.

Place the pot on the stove, on high heat until you can hear the sizzling start, then reduce to medium heat and simmer. When there is place in the pot, add the onion, herb(s), optional extras and garlic.
Continue to simmer until the ingredients have cooked soft.

Once all ingredients are soft, blend everything together in the pot to a sauce consistency. If you prefer it a bit chunky, that's fine. Place back on the heat to simmer until the liquid has reduced to your chosen consistency.

It will firm up in the bottle too, once cooled, so take that into consideration.

Prepare your sterilised bottles while the sauce is in its final stages of cooking. Spoon the hot mixture into the hot, sterilised bottles as full as possible. Take care to keep the rim and thread of the bottle clean before screwing the lid on firmly otherwise a good seal will not be formed.

Place the bottle upside down on the work surface to cool.

Once the bottles have cooled, they can be turned upright again. Check that the lids of the bottles have been "sucked" in to confirm a good seal. Store in a cool dark cupboard until needed.

Brinjal and millet Lasagna

1.Slice brinjals and cook with a combination of enough water little and olive oil until soft. Once the water has evaporated, saute the eggplants. Remove from the pan and set aside.

2. Stir fry cabbage and leeks (or any leafy greens veg) and season accordingly. I seasoned with cayenne pepper ๐ŸŒถ๏ธ, lemon zest, garlic salt, chives, ginger and turmeric.

3. Add cooked millet and combine well.

4. Layer your cooked Brinjal on a plate...Fill with millet & cabbage stir fry.Place another layer of brinjal and another filling...
