A FEW TRUTHS ABOUT TOUGH TIMES

1. If you accept tough times are part of the seasons of life, it will keep you from sinking into depression.

2. Maintain a healthy perspective. Going through tough times doesn't mean you are not blessed, you are actually being prepared for something great. Preparation is often not easy but it is the foundation of better things to come.

3. Tough times will reveal to you your true friends and expose the fake ones.

4. Tough times will introduce to you real friends who are attracted to your purpose.

5. The best ideas tend to be conceptualized in tough times.

6. Sometimes God allows you to go through tough times to wake you up and get your attention especially when you have become too familiar with Him.

7. Sometimes you have to reach a dead end where no one but God can help you, so that no one but God can receive the glory.

8. Great people have learnt the art of converting tough times into a path to being a master of something.

9. There are some lessons that tough times will teach you that good times can't.

10. Tough times will open your eyes to see opportunities and doors that are complacent you did not.

11. Some of us lack the courage to move past our current level and lack the initiative to take the next step on our own, tough times will catapult you to the next stage of your life that you are afraid to take.

12. Tough times will make you naked so that you see yourself for who you truly are. Tough times will force you to be real with yourself, what are you really made of? Because when you are going through tough times, there is no one to impress, you have to be you.

13. Most couples enter their best season after they reach rock bottom. That is when their true love is tested and they emerge stronger together.

14. Instead of complaining about tough times, ask yourself "What am I being taught and how can I ride this wave to be better?"

One cold night a billionaire met an old poor man outside. He asked him, "don't you feel cold being outside, and not wearing any coat?" The old man replied, "l don't have it but I got used to that." The billionaire replied, "Wait for me. I will enter my house now and bring you one. ' The poor man got so happy and said he will wait for him.The billionaire entered his house and got busy there and forgot the poor man. In the morning he remembered that poor old man and he went out to search for him but he found him dead because of cold, but he left a NOTE, "When I didn't have any warm clothes, I had the power to fight the cold because I was used to that. But when you promised me to help me, I got attached to your promise and that took my power of resisting.

MORAL: Don't promise anything if you can't keep your promise. It might not mean anything to you, But it could mean everything to someone else.

Crispy Air Fryer Onion Rings
(Air fryer SA/Kaalvoet/Barefoot Chef)

2 large onions
3/4 cup flour
2 eggs
2 tablespoons milk
2 cups breadcrumbs
1 tsp baking powder
2 tsp cornstarch (Maizena)
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Dried Herbs to preferences
1 teaspoons salt
Black pepper to preference

Cut off both ends of the onions and peel off the skin.

Slice the onions into rings. Separate the rings from each other.

Prepare 3 bowls -
Add the flour, baking powder and Maizena in a bowl. Beat the eggs and milk in another bowl. Add the breadcrumbs to a third bowl. Mix the smoked paprika, onion powder, garlic powder, dried herbs (I used Italian Herbs), salt and grinded black pepper to my liking to the breadcrumbs.

Dip the onion rings in the flour first to coat both sides of the rings. Dip the flour-coated rings into the egg mixture. Make sure to completely coat them with the egg so you cannot see any of the flour.

Dip the rings in the seasoned breadcrumbs. To thoroughly coat them, use your fingers to press the breadcrumbs onto the rings and place on a baking tray. I double dipped some to make sure they are properly coated. You can spray the onion rings with some oil to coat.

Heat the air fryer to 190C. And set time for 10 minutes. Carefully place a single layer of the onion rings into the air fryer and fry untill time is over. I left them for a while to prepare other foods. I added a bit of canola oil on a plate and rubbed the onion rings both sides in the oil and popped them back in the airfryer for a few minutes just before I served it with burgers.

Came out crispy on the outside and onions were soft inside without being deep fried in oil.

Kept the rest in a container in the fridge for the next day and will just refry for a few mins untill hot and crispy again.

Lemon Bread
(incredable recipes/Kaalvoet/Barefoot Chef)

6 tablespoons shortening
1 cup granulated sugar
2 large eggs
Grated lemon rind from one lemon
½ cup milk
1 ½ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
Glaze ...
3 tablespoons granulated sugar
Juice of one lemon

Instructions
Preheat oven to 375F. Grease a loaf pan and set aside.
In a large bowl, cream together shortening and sugar. Add eggs, one at a time, beating well after each addition. Stir in lemon rind.
In another bowl, sift flour, baking powder and salt. Add flour mixture alternately with milk to the creamed shortening mixture.
Spread mixture evenly into loaf pan. Bake for 40 minutes or until a toothpick inserted in the center of the loaf comes out clean.
Remove from oven. While still hot, sprinkle sugar over loaf. Then drizzle lemon juice over top. Let cool before slicing.

Short story: 🍎An Apple Tree and Its Unconditional Love

A long time ago, there was a huge apple tree. A little boy loved to come and play around it everyday. He climbed to the treetop, ate the apples, and took a nap under the shadow.

He loved the tree and the tree loved to play with him. Time went by, the little boy had grown up and he no longer played around the tree every day.

One day, the boy came back to the tree and he looked sad.
“Come and play with me”, the tree asked the boy.

“I am no longer a kid, I do not play around trees any more” the boy replied.

“I want toys. I need money to buy them.”

“Sorry, but I do not have money, but you can pick all my apples and sell them. So, you will have money.”

The boy was so excited. He grabbed all the apples on the tree and left happily. The boy never came back after he picked the apples. The tree was sad.

One day, the boy who now turned into a man returned and the tree was excited.

“Come and play with me” the tree said.

“I do not have time to play. I have to work for my family. We need a house for shelter. Can you help me?”

“Sorry, but I do not have any house. But you can chop off my branches to build your house.” So the man cut all the branches of the tree and left happily. The tree was glad to see him happy but the man never came back since then. The tree was again lonely and sad.

One hot summer day, the man returned and the tree was delighted.

“Come and play with me!” the tree said.

“I am getting old. I want to go sailing to relax myself. Can you give me a boat?” said the man.

“Use my trunk to build your boat. You can sail far away and be happy.”

So the man cut the tree trunk to make a boat. He went sailing and never showed up for a long time.

Finally, the man returned after many years. “Sorry, my boy. But I do not have anything for you anymore. No more apples for you”, the tree said. “No problem, I do not have any teeth to bite” the
man replied.

“No more trunk for you to climb on.” “I am too old for that now” the man said. “I really cannot give you anything, the only thing left is my dying roots,” the tree said with tears.

“I do not need much now, just a place to rest. I am tired after all these years,” the man replied.

“Good! Old tree roots are the best place to lean on and rest, come sit down with me and rest.” The man sat down and the tree was glad and smiled with tears.

This is a story of everyone. The tree is like our parents. When we were young, we loved to play with our Mum and Dad. When we grow up, we leave them; only come to them when we need something or when we are in trouble. No matter what, parents will always be there and give everything they could just to make you happy.

You may think the boy is cruel to the tree, but that is how all of us treat our parents. We take them for granted; we don’t appreciate all they do for us, until it’s too late.

The moral of the story is that parents, like the apple tree, love their children unconditionally and are always there to provide for them. However, as we grow up, we tend to take our parents for granted and only come to them when we need something. We should learn to appreciate our parents and all that they do for us before it's too late. We should cherish the time we have with them and show them love and respect, just as they have shown us throughout our lives.
