At Our Nourish Nest an eco & sustainable lifestyle means taking really good care of ourselves, our friends, family, community, & Mother Earth, & giving as well as taking & sharing. For us at Our Nourish Nest a green, eco and sustainable lifestyle is about taking really good care of ourselves, our friends, family, community, and Mother Earth. It’s about nourishing the amazing mind, body and spirit

given to each of us, so we can all reach our full potential to be the best we can be, and support others to do the same. We’re truly passionate about some wonderful things… about quality real food, recycling, reclaiming and upcycling, waste reduction, especially plastic waste reduction, creativity, natural pest control to save wildlife, permaculture and organic gardening, supporting other fantastic small businesses, sustainability, filtered rainwater, solar power and more. We are careful with what we buy, our bin often doesn’t go out for collection for 6 weeks or more, we mend or alter our clothes when we can, and repair broken items, and use non or low-tox products around the home, from paint to pest control, food wraps to cookware that lasts a lifetime. We live our passion and share it on social media and in workshops. We’re especially passionate about real, good food, both nutritious and a little indulgent, but always top quality, as chemical free and seasonal as possible. We love growing it, cooking it, eating it, and making it available to others. We grow as much of our own fruit, vegetables and herbs as we can in quality soil, fed from our own composts and worm farms, using no chemical pesticides, and giving back to the earth. We savour the seasonal when it is fresh, available, abundant and affordable, and enjoy the traditionally preserved, dried and fermented, pickled fruits, vegetables, teas and spices created at the time when the fresh ingredients are full of goodness. Our life overall, and especially our low-tox life, based on permaculture and organic gardening principles, is a life that has nourished us and we are excited to share our experiences, knowledge, produce and products with you in workshops, through our online insights and open days, or via the wonderful products we sell.

Thanks to these 11 1/2 kg of just harvested sweet potato, we have reached over 250 kg of homegrown fruit, veggies and herbs for this year so far. Our target is 500 kg, or half a tonne! This does not include anything that we grow that goes to our beautiful chickens, or into the worm farms or compost.

(Almost) Lost traditions…

Another unique Irish culinary invention, mentioned in an earlier post, is buttered eggs, a unique and tasty way to preserve eggs.

Invented in time immemorial, probably due to the proliferation of butter on the island, the Irish developed this method to preserve eggs. It became so popular that the exportation of buttered eggs to England numbered in the tens of thousands of dozens every year during the English colonial times. Rubbed over freshly laid eggs, the butter melts, forming a thin protective layer.

Because the shell is porous, it absorbs the butter to form a more protective seal. Curious, I took one home. Soft-boiled, it tasted fresh from the hen, the yolk the color of sunshine, the white carrying with it a whiff of cream. Today, buttered eggs are a delicacy, largely vanished from Irish farmyards and pantries. You can’t butter eggs by machine, as it’s an intimate practice involving the hand. Every one needs to be done by hand. Farmers’ wives used to say it was a task most difficult to execute in winter when the butter was harder and their hands were colder. So perhaps, in addition to the egg and the butter, what I taste is the memory of an Irish woman whose palm coaxed butter lovingly all the way around a fragile shell, hoping to preserve it for as long as she could.

That might seem counterintuitive. Why waste butter on the outside of an egg? But clever Irish farmers had hit on buttering eggs as a way to preserve them during winters when hens produce less. Taking freshly laid, still-warm eggs, farm families rolled them in their buttery palms. The butter helped solidify the hot, brittle shells, sealing off the yolky contents from the outside air.

Buttered eggs take on a shiny gleam. And, as an added bonus, the taste of butter permeates the egg, making it even richer when cracked open and cooked. Eggs preserved this way keep for up to six months in a cool place, and I have had them last even longer. It’s not surprising that buttered eggs were a Cork specialty, seeing as it’s also home to the Cork Butter Museum, a tribute to the region’s status as a butter-producing powerhouse.

They can be found at markets in Ireland, and I make them regularly as a homestead specialty. If you keep chickens or know someone local who does, then you can too!

Just checked on the chickens… I don’t think this one is going to lay any eggs!

Is not unusual for young possums to not make it back to their home at the end of their nocturnal wandering. Like most teenagers, they lose track of time! 😝 This little one has been safe in our hen house and will leave tonight to eat some goodies from our garden and find its way back to its usual home.

So, the girls are finally getting a little bit of sunlight! This, combined with the fact that our five over-sexed teenage roosters (no other way of putting it) are finally going to a new home this coming Friday, should mean we start seeing a couple of eggs again, as we’ve had only 1 in several weeks. The girls have been a bit stressed with the boys amorous advances and the boys hogging heaps of food! The good news is that the boys are going to 2 homes where they will be used for breeding, rather than the dinner table.

Given chickens need a certain number of hours of sunlight to aid egg production, and we’ve certainly not had much sunlight in the last few weeks here in Bundeena, we were prompted to think about what this means in Scandinavian countries, and other countries in those regions, for about 6 months of the year. Turns out they use a lot of artificial lights to get their egg production happening. Living in Australia this is something most of us have never considered before. Just some of our chicken inspired thinking we thought we’d share, along with a wish for you to have a truly beautiful day!
