Easy No-Bake Cheesecake Parfait

Ingredients:

For the crust:

1 cup graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons unsalted butter, melted
For the cheesecake filling:

8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
For the topping:

Fresh berries, fruit compote, or chocolate shavings (optional)

Directions:

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Set aside.
In a large bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, beating until well combined.
In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
To assemble the parfaits, layer graham cracker crust mixture and cheesecake filling in individual serving glasses. Repeat layers as desired.
Top with fresh berries, fruit compote, or chocolate shavings if desired. Refrigerate for at least 1 hour before serving.

This Creamy Chicken Lasagna is a quick and easy recipe perfect for any meal. The creamy spinach sauce and tender chicken make it a family favorite! 🐔🍝✨💖

Ingredients:

For the Lasagna:

9 lasagna noodles, cooked al dente 🍝
4 cups shredded rotisserie chicken (or cooked from 2 lbs chicken breast) 🐔
Spinach Cream Sauce:

1 Tbsp olive oil 🫒
1 medium onion, finely chopped 🧅
4 Tbsp unsalted butter 🧈
1/3 cup all-purpose flour 🌾
2 1/2 cups chicken broth 🍗
1 1/2 cups half and half (or equal parts heavy cream and milk) 🥛
5 oz fresh spinach, coarsely chopped 🌿
2 tsp sea salt 🧂
1/2 tsp black pepper 🌶️
3 garlic cloves, minced 🧄
Ricotta Cheese Sauce:

15 oz ricotta 🧀
1 large egg 🥚
1/4 cup parsley, chopped 🌿
1/4 cup parmesan cheese, grated 🧀
3 cups mozzarella cheese, shredded (12 oz), divided (reserve 1 cup for topping) 🧀
Instructions:

Preheat Oven: Preheat oven to 375˚F. 🔥
Cook Noodles: Cook lasagna noodles in salted water until al dente, then drain and rinse with cold water to stop cooking. 🍝
Make Spinach Cream Sauce: Sauté finely chopped onion in 1 Tbsp olive oil until softened. Add 4 Tbsp butter and whisk in 1/3 cup flour until golden. Gradually add 2 1/2 cups chicken broth and 1 1/2 cups half and half, whisking until smooth and thickened. Stir in minced garlic, chopped spinach, 2 tsp sea salt, and 1/2 tsp black pepper. Remove from heat. 🧅🧈🌾🥛🌿
Make Ricotta Cheese Sauce: In a large bowl, mix 15 oz ricotta, 1 large egg, 1/4 cup chopped parsley, 1/4 cup grated parmesan, and 2 cups shredded mozzarella. 🧀🥚🌿
Assemble Lasagna: Spread a little spinach cream sauce on the bottom of a 9x13 casserole dish. Add 3 lasagna noodles, 1/2 of the ricotta mixture, 1/2 of the shredded chicken, and 1/3 of the spinach sauce. Repeat layers. Top with remaining 3 noodles, spinach sauce, and reserved 1 cup shredded mozzarella. 🍝🐔🧀
Bake: Cover with foil (use toothpicks to prevent foil from touching cheese) and bake at 375˚F for 45 minutes. Uncover and broil for 2-3 minutes until cheese is golden brown. Let rest for 10 minutes before slicing. 🔥🍝

No-Bake Lemon Eclair Cake🤤
Creamy Lemon Eclair Delight

Ingredients:

2 packs of graham crackers
2 packages (3.4 oz each) instant lemon pudding mix
3 cups cold milk
1 container (8 oz) whipped topping, thawed
1 can (16 oz) lemon pie filling
1/2 cup lemon curd
Lemon zest for garnish (optional)
Directions:

In a large bowl, whisk together the lemon pudding mix and cold milk until thickened, about 2 minutes.
Fold in the whipped topping until well combined.
In a 9x13 inch baking dish, arrange a single layer of graham crackers to cover the bottom.
Spread half of the lemon pudding mixture over the graham crackers.
Add another layer of graham crackers on top of the pudding layer.
Spread the lemon pie filling evenly over the graham crackers.
Add another layer of graham crackers.
Spread the remaining lemon pudding mixture over the top.
Add a final layer of graham crackers.
Spread the lemon curd evenly over the top layer of graham crackers.
Cover and refrigerate for at least 4 hours or overnight to allow the layers to set.
Before serving, garnish with lemon zest if desired.

Caramel Brownie Cheesecake
Ingredients:
-For the brownie base:
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
-For the cheesecake:
2 packages (8 ounces each) cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
-For the caramel topping:
1 cup sugar
6 tablespoons butter
1/2 cup heavy cream
Pinch of salt
Directions:
-Prepare the brownie base:
Preheat oven to 350°F (175°C). Line an 8-inch springform pan with parchment paper.
Melt butter and mix with sugar. Add eggs and vanilla, mix until smooth. Stir in cocoa, flour, and salt until just combined.
Spread the brownie batter evenly into the prepared pan. Bake for 20 minutes.
-Prepare the cheesecake mixture:
Beat cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
Pour cheesecake mixture over the baked brownie base. Return to oven and bake for 45 minutes or until set.
-Prepare the caramel sauce:
Heat sugar in a saucepan over medium heat, stirring constantly until melted and amber in color. Carefully stir in butter and then heavy cream, add salt. Let cool slightly.
Pour caramel over the cooled cheesecake.

Orange Dreamsicle Cake
Ingredients
For the Cake:
1 box (15 ¼ oz) white cake mix
1 cup cold milk
½ cup orange juice
½ cup vegetable oil
1 oz French vanilla pudding mix
3 oz orange Jello
4 large eggs
For the Frosting:
8 oz whipped topping
20 oz can crushed pineapples, drained
1 cup sour cream
1 cup shredded coconut
1½ cups white sugar
½ cup finely chopped pecans (optional)
Directions
Prepare the Cake:
Preheat your oven to 350°F (177°C). Grease and flour two 9-inch cake pans.
In a large mixing bowl, combine the cake mix, milk, orange juice, vegetable oil, pudding mix, orange Jello, and eggs. Beat the mixture well until smooth and well combined.
Divide the batter evenly between the prepared pans. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
Make the Frosting:
In a medium bowl, mix the drained crushed pineapples, shredded coconut, sugar, sour cream, and whipped topping until well combined. If desired, stir in chopped pecans for added texture and flavor.
Assemble the Cake:
Place one layer of the cake on a serving plate. Spread half of the frosting evenly over the top. Place the second cake layer on top and use the remaining frosting to cover the entire cake smoothly.

Mini Cheesecakes III
Ingredients
Crust:
⅓ cup graham cracker crumbs
1 tablespoon white sugar
1 tablespoon margarine, melted
Filling:
1 (8 ounce) package cream cheese, softened
¼ cup white sugar
1 ½ teaspoons lemon juice
½ teaspoon grated lemon zest
¼ teaspoon vanilla extract
1 egg
Directions
Preheat oven to 325 degrees F (165 degrees C). Grease a 6-cup muffin pan.
In a medium bowl, mix together the graham cracker crumbs, sugar, and margarine with a fork until combined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake in the pre-heated oven for 5 minutes, then remove to cool. Keep the oven on.
Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg.
Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. Bake at 325 degrees F (165 degrees C) for 25 minutes. Cool completely in pan before removing. Refrigerate until ready to serve.
