Big Game Mini Taco Cups!! The perfect beefy bites for this Sunday!
Recipe Below:

Ingredients:
1 lb 93/7 Verde Organic, 100% Grass-Fed Ground Beef

1/2 tbsp Himalayan salt

1/2 tbsp cumin

1/2 tbsp paprika

1/2 tbsp oregano

1/2 cup red bell pepper, diced

1/2 cup yellow bell pepper, diced

1 tbsp salted butter

1 small yellow onion, diced

1 cup shredded cheddar cheese – 1/2 cup in recipe, 1/2 cup for topping

Cooking Spray

16 Won ton wrappers

Toppings: choose your own
Shredded Cheese
Sour Cream
Salsa
Avocado, chopped
Cilantro, chopped

Instructions
Heat oven to 350 degrees

In a skillet, melt butter on medium heat, add diced onion, sauté for 2-3 minutes while preparing ground beef mixture.
In a bowl, mix well together ground beef, Himalayan salt, cumin, paprika, oregano, red bell pepper and green bell pepper.
Add ground beef mixture to pan with sautéed onions, cook for 3-4 mins until beef is browned.
Spritz mini muffin tin with cooking spray. Push wonton wrapper into each tin.
Fill each wonton wrapper in tin half way with cooked ground beef mixture. Sprinkle with grated cheddar cheese.
Fill each tin with a second layer of ground beef mixture. Sprinkle top with grated cheese.
Bake in pre-heated oven for 8 minutes, until cheese has melted.
Add your favorite toppings.

Enjoy!

🌮Steak Tacos with Mango Pico 🌮

Elevate your tacos with Organic, 100% Grass-Fed, and Regenerative Verified Sirloin Steaks!

INGREDIENTS:
For the Carne Asada:
2 pounds Verde Farms Sirloin Steak
2–3 chipotles in adobo, plus 1 tablespoon of the adobo sauce
2 minced garlic cloves
1 lime, zested and juiced
2 tablespoons olive oil, divided

For the Mango Pico de Gallo:
1 cup mango, diced
1 cup heirloom cherry tomatoes, diced
½ cup cilantro, chopped
½ cup red onion, chopped
1 jalapeño, seeded and diced
2 tablespoons orange juice
2 limes, zested and juiced
1 teaspoon salt

For Assembly:
6 corn tortillas, heated
¼ cup cilantro, chopped for garnish
2 limes, cut in wedges
4 tablespoons queso fresco, crumbled

DIRECTIONS:
1. Chop the chipotles in adobo and combine with garlic cloves, lime juice, zest, and 1 tablespoon of olive oil. Place in a bowl with the Verde Farms Sirloin Steak, cover and put in the fridge, let marinade for at least an hour or overnight.
2. Once steak is marinated, heat a cast iron skillet with 1 tablespoon of olive oil, then place the steak, cooking 2–3 minutes on each side, depending on desired temperature.
3. To make the pico de gallo, combine the mango, heirloom cherry tomatoes, cilantro, jalapeño, and red onions. Then toss in orange juice, lime juice, lime zest, and season with salt. You can make the mango pico de gallo up to a day in advance.
4. Let the sirloin steak rest for at least 5 minutes, slice against the grain. Distribute the steak among the six tortillas.
5. Then top the tacos with mango pico de gallo, extra cilantro if desired, and queso fresco crumbles. Serve alongside lime wedges and enjoy.

Recipe of the day! Grilled Steak And Green Veggie Power Bowl 🥩Topped with a tangy fresh herb pesto, this grilled steak salad power bowl is low-carb, so it’s perfect for keto, Paleo and whole30 diets.

Grilled Steak and Veggies:
4 Verde Grass-Fed Beef Strip Steaks, at room temperature
1/2 cup olive oil
3 cloves garlic, minced
2 tbsp freshly grated lemon zest
1/2 tsp chili flakes
2 tsp salt, divided
1 1/2 tsp black pepper, divided
2 zucchinis, cut into 1/4-inch slices
1 bunch asparagus, woody stems trimmed
1 bunch scallions

Herb Pesto:
1/4 cup raw almonds
2 cloves garlic, minced
1 cup packed fresh parsley leaves
1/2 cup packed fresh basil leaves
1/2 cup packed fresh mint leaves
1/2 cup olive oil
1/4 cup grated Parmesan cheese
2 tbsp freshly squeezed lemon juice
1/2 tsp salt

Assembly:
1 pkg (5 oz) baby arugula
1 avocado, peeled, halved, pit removed and sliced
1 jar (12 oz) water-packed whole artichoke hearts, drained well and halved
1 cup grape tomatoes, halved
Lemon wedges

Instructions
Grilled Steak and Veggies: In small bowl, whisk together olive oil, garlic, lemon zest and chili flakes. Pat steaks dry with paper towel. Rub steaks with half the oil mixture and season with 1 tsp salt and 1/2 tsp pepper. Toss zucchini, asparagus and scallions with remaining oil mixture, remaining salt and remaining pepper.
Preheat grill to medium-high heat; grease grate well. Grill steaks, turning once, for 6 to 8 minutes for medium rare or cook to preferred doneness. Let rest for 5 to 10 minutes before slicing.
Meanwhile, grill zucchini, asparagus and scallions, turning once, for 4 to 6 minutes or until lightly charred and tender.
Herb Pesto: In small food processor, pulse almonds and garlic until finely ground. Add parsley, basil, mint and oil; pulse until smooth. Stir in cheese, lemon juice and salt.
Assembly: Divide arugula among 4 to 6 shallow bowls. Top with sliced steak, grilled veggies, avocado, artichokes and tomatoes. Drizzle herb pesto over top. Serve with lemon wedges.

Tips:
To check the steak’s doneness, insert instant-read thermometer sideways into center of steak until it registers 120°F to 130°F for rare, 130°F to 135°F for medium-rare, 135°F to 145°F for medium, 145°F to 155°F for medium-well, and 155°F and up for well done.

Bringing steaks to room temperature will ensure they cook evenly.

Use good-quality sea salt or kosher salt for the best pesto flavor.

Who's craving a Caprese Burger?! Try it out next time with beef from a better place! Recipe below:
INGREDIENTS:
Burger Patty:
2 tablespoons avocado oil or high-heat neutral oil
2 pounds Verde Farms 93% Lean Ground Beef
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
Toppings:
6 sesame buns, toasted
½ cup fresh mozzarella, sliced
2 heirloom tomatoes, sliced
¼ cup basil leaves
¼ cup balsamic vinegar glaze

DIRECTIONS:
1. Heat a large cast-iron skillet with oil until the oil is smoking.
2. In a large bowl combine Verde Farms 93% Lean Ground Beef, Italian seasoning, garlic powder, onion powder, salt, and pepper. Combine until spices are mixed thoroughly. Divide your mixture into 6 patties, around 5 ounces each.
3. Place the patties onto a cast-iron skillet, in 2 batches, careful not to crowd the pan. Cook on each side for about 3 to 4 minutes, depending on desired temperature.
4. To assemble the burger, place a patty on a toasted sesame bun, layer on fresh mozzarella, heirloom tomato slices, and 4 to 6 basil leaves, and drizzle balsamic vinegar glaze.
5. Serve and enjoy!

INGREDIENTS

For the Homemade Crispy Onions:

½ White Onion, thinly sliced
1 cup All Purpose Flour

For the Steak Sandwich:

1 Baguette or Ciabatta

Ingredients:

1 pound (450 grams) of Verde 80/20 ground beef
1.5 teaspoons salt
2 teaspoons black pepper
1 teaspoons garlic powder
1 teaspoons onion powder
4 burger buns
Your favorite burger toppings (lettuce, tomatoes, onions, pickles, cheese, etc.)
Condiments of your choice (ketchup, mustard, mayo)

1. Preheat your grill or stovetop pan to medium-high heat.
2. In a mixing bowl, combine the ground beef, salt, and black pepper. Gently mix until the seasonings are evenly distributed, being careful not to overmix.
3. Divide the beef mixture into four equal portions and shape them into patties, about 1/2 inch thick.
4. Make a slight indentation in the center of each patty to prevent it from puffing up during cooking.
5. Place the burger patties onto the preheated grill or pan. Cook for about 4-5 minutes on each side for medium doneness. (Adjust the cooking time according to your desired level of doneness.)
6. While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.
Once the patties are cooked to your liking, remove them from the heat and let them rest for a few minutes.
7. Assemble you'r burgers by placing the cooked patties on the toasted buns. Add your desired toppings and condiments.
8. Serve your Classic Burgers hot and enjoy!
