Empty house tonight, perfect time for ‘girl dinner’. In a starring role - beetroot dip. I always have the best intentions with beetroot but often it ends up forgotten. No more! This must be the easiest way with it: wrap in foil and bake for about an hour. When cool, scoop the flesh into blender with a can of chickpeas, 2 garlic cloves, lemon juice, olive oil, salt, tahini and cumin. I didn’t have tahini, probably put too much beetroot and it still tastes delish!

Have you tried growing food from your scraps? Lately, our pineapples have these beautiful tops on. If you’d like to try to grow a pineapple, don’t throw these out. Twist them off carefully, let dry off for a couple days. Then gently pull off a few leaves at the bottom to reveal baby roots. I pretty much just sit them on top of the soil and let them do their thing. I have a few growing but still waiting on my first pineapple 🍍🤞

Cooking tomatoes are just $3/kilo this week. Roast in the oven, cut side down, then pinch the skins off. I like to freeze them in silicone muffin trays and store in zip-lock bag. So convenient to use in pasta dishes, soups, stews etc.

The lighter way to snack... I think of these as Maltesers for adults. The chocolate is dark and its full of puffed-up quinoa, chia and maca. Perfect afternoon pick-me-up. Definitely one of my favourite products from the Honest to Goodness range.

This concoction is a 1 ingredient grape ‘jam’. Perfect for when you have a bunch of grapes past their prime. Just simmer, mash and simmer some more until you get sticky consistency. No food waste!

After the success of Belicious Butter Chicken, Bel has tackled another iconic dish and she’s nailed it. The sachet will make at least 4 meals, which works out at less than $3.50 a meal.
Ingredients: Coriander, Chilli, Curry leaf, Turmeric, Ginger, Black pepper, Lemongrass, Onion, Cardamon, Cinnamon.
Of course it’s gluten free with no added fillers, salt or sugar.
