Join our Microgreens CSA!

We are seeking to start a microgreens CSA where community members pick up a weekly share of microgreens at our farm. We hope to start this in the coming month or two with a weekly 8-ounce microgreens mix. The cost would be $15 / week for 5 weeks with a full payment of $75 due at signup. We want to be as accessible as possible, and we will be offering a few at a very discounted rate as well.

Varieties in this certified organic rotating mix would include:
Radish, Broccoli, Arugula, Beet, Amaranth, Sunflower, Pea, Cilantro, Basil, Dill, Cabbage, Mustard, Nasturtium, or Cress.

Vegan ratatouille with microgreens!

Our Power Mix is a delicious addition to this warm and nourishing meal.

Here's a fun way to cook this meal:

Thinly slice 1 eggplant, 2 zucchini, 1 yellow squash, 3 tomatoes, and 2 potatoes. Then line your veggies around the cast iron or preferred pan. Top this with simmered jarred pasta sauce before baking. We added some extra flavor to the sauce and simmered for a bit before topping the veggies. Our additions to the sauce were fresh basil, chopped onions, garlic, olive oil, and dried herbs with some salt for taste. Once the sauce simmered for a few minutes we poured this all over our veggies and baked at 375 for 30-40 minutes with some aluminum foil on top. You could even drizzle more olive oil all over the veggies too.

Once veggies are soft top with microgreens and serve! We hope to bring some of these recipes to life on our website in the coming months!

This past week we spent an amazing evening at the as Chef Owner Ken hosted a packed house of people learning the craft of Sicilian and Sardinian Italian cooking. He included microgreens from our farm on two of the dishes; Broccoli and Power mix. Throughout the evening, we shared about the farm of Grateful Greens as well as the beauty, flavor, and nutrient density of organically grown microgreens.

Ken demonstrated how to make two handmade pastas including Spizzulus and Busiate as well as a Broccoli Pesto and Pork Ragu. There were 5 courses all handmade at Blue Moose by Ken and Ethan. Two pasta courses, two appetizers, a cannoli and of course Sardinian and Sicilian wines.

Pictured here is Ken making the Spizzulus (from Sardinia) a pasta made of flour and wine which was then married with a Broccoli pesto and topped with our Broccoli microgreens. A favorite of the evening.

Also pictured here is a Fregola (citrus salad) from Sardinia topped with our Power Mix. Demonstrating the beautiful partnership citrus and microgreens can have on a dish.

This project/business/farm/vision wants to heal food systems, people, and communities from the inside out. Every community is able to produce its own food (year-round!). We want to help! When a community comes together around truly good food (production and processing), good health is a result, on many levels.

There is a lack of high quality food access for the general population. When I was growing up my family couldn’t afford to buy high quality or local food. Fortunately we had land and the knowledge of gardening. For many reasons, the large majority of our country’s people do not grow food anymore. The food that is produced for and consumed by most people is mass produced without love or passion and instead with chemicals and greed. I want to share knowledge and the high quality food we grow with as many people as possible. I believe this country’s main food systems are unhealthy and inhumane. Local food production is one of the many necessary steps to solve our country’s food crisis.

Share love! Love of self-sufficiency on an individual and communal level. Love for the plants and animals that we consume. And love for ourselves and for all others!
