Our new friend the Porcelain mushroom. This one took us a full year to figure out. It's not the hardest mushroom to grow, but getting it to the appropriate saturation level was a nightmare. The mushroom would fruit beautifully and taste great. Then when stored it would become soft and start to melt over night. We are now on day five in the refrigerator and it's looking great. Come try this new bad boy for yourself!

Here's a simple breakfast burrito with oyster mushrooms.

First I cooked Elm Z Oysters in butter with onions, garlic, salt and pepper until they were a little charred and the onions were soft. Then I scrambled some eggs and rolled it all in a tortilla with avocado. You can add some cheese, sauce or hashbrowns if you've got the time. Simple, tasty and nutritious.

Our Spent Mushroom Substrate/Compost consists of hard wood pellets and soybean hulls that have been broken down by mycelium.

Can Be Used For:
🌿 Adding nutrients to the soil
🌿 Increasing water holding capacity of soil
🌿 Mulch
🌿 Adding to a compost bin/pile
🌿 Insect Farming

Note: Spent Mushroom Substrate is alkaline and can harm some germinating seeds that prefer acidic soil. It's best to mix well into soil before sowing seeds and be aware what ph each plant prefers.

"Hi. So, I’m new to cooking with wild mushrooms, and wanted to try 2 dishes: plant-based crab cakes, and also mushroom medley loaf. Stopped in last week at From Spore to More and Eric set me up. Lion’s Mane for the crabcakes and a variety for the loaf. They turned out yummy. Even had the leftover loaf for breakfast with eggs on top. So good!"

Stop by Chicago Culinary Kitchen tomorrow to try Chef Greg's oyster mushroom "steak" sandwich

Ok, now that all that Corned Beef & Cabbage madness is over, it's time to get back to what we do on the regular: wow you with flavor. This week we're reaching deep into our bag of tricks and pulling out some classics as well as some newcomers including our FIRST major vegetarian special. Keep reading:

Wednesday: Beef on Weck is a Buffalo, NY classic sandwich similar to our famous Pit Beef but in this case it'll be sandwiched between a Salted Carraway Bun that really sets the whole thing off!

Thursday: Blue Oyster Cult is really going to rock you! We're going MEATLESS with some locally sourced Blue Oyster Mushrooms by "From Spore to More" in Fox River Grove. These "meaty" Mushrooms will be served on Ciabatta with Arugula, Pickled Onion, Onion Straws, & Truffle Mayo. For those of you scratching your heads in disbelief, don't worry: Trust in Greg.

Friday: The Walleye Fry is BACK! and will be a giant Tempura-battered Walleye fillet served with our pillowy & savory homemade Hush Puppies. But If you're not into that, we'll have plenty of Pastrami, Turkey, Super Katz's, Tamales, & more throughout the weekend!!!

Saturday: Meatballs Divorciados may sound complicated but couldn't be simpler! Giant Smoked Meatballs served with homemade Red & Green Salsas, topped with Parmesan & Giardiniera on a Toasted Roll. They're better together than they are apart!

Sunday: Pastrami Beef Ribs are back! These bad-to-the-bone Beef Ribs paired with our signature Mustard Q are a great way to end the week!
