Medjool dates are here and they are super fresh and amazingly delicious.
This recipe for date bites packs up so well for lunches or snacks on the go.
Make sure to book mark and save this one for later.
2 cups dates chopped and smashed.
1/2 cup sun butter or other nut butter.
1/4 cup chopped nuts.
1/4 cup shredded coconut
Pinch of salt
Smash all ingredients together. Form into small balls about 2 tablespoons worth of mixture. Chill in the fridge for a couple of hours. Sprinkle with more sea sea salt and serve.
Today we start day 2 of date harvesting. Harvesting dates is a long, arduous process. Not to mention before harvest where we bag the dates and trim the trees.
But if you’ve ever tasted a local Medjool date you understand how the entire scenario is so worth it!
Tomorrow begins our first day of date harvesting! Everyone has been waiting for dates. 😀

Arugula is a fantastic summer green that can offer a quick snap of spicy bite to your dish.
We love to use it for a quick pesto to use in sandwiches, stir it into soup, and top a baked potato.
2 cups arugula
1 clove garlic
1/2 - 2/3 cup @queencreekolivemillolive oil
1/4 cup walnuts
1/4 cup Parmesan cheese
@seesalttaste Sea Salt to taste
Start with some arugula and olive oil in high speed blender. Start it blending then add in more arugula, and oil. Slowly add other ingredients adding the olive oil slowly to keep the mixture blending smoothly. Taste for saltiness and add more or less as needed.
This is still one of our favorite ways to enjoy the bounty of zucchini.
Zucchini Noodles
2 whole Zucchini
1 Tablespoon Butter
1 Tablespoon Olive Oil
2 cloves Garlic, Minced
3 whole Roma Tomatoes (or any fresh tomato. We have lots of fresh ones!), Diced
1/4 cup Shredded Parmesan
3 whole Basil Leaves (chiffonade)
Salt And Pepper, to taste
Use a vegetable peeler, or vegetable spiralizer to make any size noodles you like out of the zucchini.
Heat a nonstick skillet over medium-high heat and heat the butter and olive oil. Add the garlic to the pan and then the tomatoes. Quick for a few minutes to soften. Add zucchini and toss around in the pan for 1 to 2 minutes. Sprinkle in salt and pepper. Add Parmesan off the heat.
Serve within a few minutes, before the zucchini gets too soft!

Kentucky Buck via Iconic Cocktail
2oz Whiskey
1oz Ginga Syrup
4oz Fresh Lemon Juice
Combine ingredients in a shaker. Shake with ice, pour over ice, top with sparkling water and garnish with a lemon wedge.

The okra is loving the heat!
We have been frying it as a side with our burgers, pickling, and roasting with garlic.

We love volunteer days! It's great to have the help (especially during big harvests like this one), but it's also great to meet more of our community.
