Southern Pineapple Cake🍍🍰
Ingredients:
For the Cake:
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 can (20 oz) crushed pineapple, undrained
1 cup chopped pecans
For the Frosting:
1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans (for garnish)
Directions:
Prepare the Cake: Preheat your oven to 350°F (175°C). In a large bowl, combine flour, sugar, baking soda, and salt. Add eggs, crushed pineapple along with its juice, and chopped pecans. Stir until the mixture is well combined.
Pour the batter into a greased 9x13 inch baking pan. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
Make the Frosting: Beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, continue beating until creamy.
Spread the frosting over the cooled cake. Garnish with chopped pecans.
