One group of workers was supposedly hired to dig all day, and the next day they had off. On that off day, another group of workers came in, hired to fill in vast holes. Quiet. That's what Chris Knight, the "hermit" they found in the middle of Maine in 2013, was striving for in his 27 years of solitude in the forest. In the middle of the night in frigid winter he felt the most calm, in that pure silence. Setting his crimes and lack of human connection aside, it is interesting to contemplate the calm you may achieve in quiet on days like this, after yet another big snowfall. Yet here I am blabbing on. I'll stop.

Maybe you've heard this before: in order for the sap to flow in a maple tree and harvest it for making syrup, temperatures need to be above freezing during the day and below freezing at night. Well, we've been tapping maples to make syrup for several years, and I must say: assuming sap is flowing simply because it is 33°F (1°C) or above is incorrect. There are other factors at play.

Deep gratitude is in the air when we prepare this holiday meal from food that we raised with kindness and care. This is a 7.5 lb red ranger that was raised on a rich, green pasture on a limited supply of organic feed. When it was roasting it smelled like we were baking biscuits.
