Ryan Hastings and I have a second layer today!! The chickens that laid these were hatched on January 23, 2024. Just short of 5 months old. Typically chickens start laying between 5-6 months although we’ve had some breeds not start until after 7. I am one happy chicken momma.

Here come your fun facts of the day (read to the bottom, you’ll be shocked!)

FACT 1: Egg color is determined by the breed of the chicken. In general, the color of an egg can be predicted by looking at the hens earlobes! Hens with white colored earlobes will generally lay white eggs, if she has red earlobes she will lay brown eggs, and if she has a bluish tinge to her earlobes she will lay blue or green eggs.

FACT 2: Mother Earth News had fresh eggs laid by chickens that graze in pastures tested by a laboratory and found that compared to the USDA food guide, free-range chicken (vs. store bought eggs) had up to 2/3 more vitamin A, twice the omega-3 fatty acid levels, three times more vitamin E, and seven times more beta carotene. They also contained 1/3 less cholesterol and 1/4 less saturated fat than store bought eggs.

FACT 3: You don’t have to put fresh eggs in the fridge!! In fact, it’s best NOT to wash eggs farmed fresh eggs until ready to use. Why? Eggs have a natural coating called a “cuticle” or “bloom” that protects the contents from bacteria. When that cuticle is washed off, the semipermeable shell can allow bacteria to pass through and contaminate the contents.
So, if you wash the protective coating off the eggs, immediately cook them or store in the fridge. They’ll last about 2 months washed and refrigerated. If you leave your fresh eggs unwashed, they can remain out on the counter for 2 weeks or refrigerated unwashed for 3 months!!!

FACT 4: Roosters are not needed for egg production. When it comes to the physical process of laying eggs, roosters are actually useless. Hens do not need a rooster to create or lay eggs. All they need is a safe place, time, and a healthy diet with enough protein and calcium to form healthy eggs.
Of course, any eggs laid by a hen where no rooster is present are going to be unfertilized, and therefore will never hatch.

And no, roosters can’t lay eggs… even if they identify as a hen they will never lay an egg... Cancel me.

We love when our girls get shoutouts in the local community.

There are so many benefits to buying local. Studies show that farm fresh eggs have less cholesterol and saturated fat than those purchased from the store. Additionally, they also contain 25% more vitamin E, 75% more beta carotene and up to 20 times more Omega-3 fatty acids.

The farm-fresh eggs often have a fresher, richer flavor, and rightfully so, as they might be fresh from the farm within a day or two, where store-bought eggs often have a shelf-life of up to 30 days.

Pictures don't do them justice, but I have to share these beauties! Salty Lemon Acres is right here in North Port, and WOW!! We cannot wait for our next dozen!! Farm fresh local eggs are the BEST!!

5 months ago we hatched our own eggs in hopes of dark olives and dark chocolate eggs. We were soooo happy to open the coop today and find our newest layers produced exactly what we were hoping for!!
