today was our beloved DK's last official day working full time for POSM. he has been our production point man for the past few years and the farm has majorly benefitted from his many skills. while we will miss him dearly, we wish him the best at his new job ! we love you DK!!

“A good chef is an artist and like paint is the medium of a painter, ingredients are the medium of a chef.” My Dad told me this a few years into my mushroom career and it’s stuck with me. The chef arouses all of our senses: sight, taste, smell, texture and sound. Like a good musician, they compose, arrange, perform and improvise.

I spent a lot of my childhood at my parents’ Jacksonville Beach seafood restaurant, Manatee Ray’s. My Mom kept the books and my Dad was the Chef. I saw first hand that a Chef is the hardest working type of creative person. More and more I find myself thinking of the Chefs we work with as collaborators, not customers. Before I approach a new chef, I look at their menu, what is their relationship to the ingredients? What words do they choose? Will they be inspired by our mushrooms and will that translate to the people consuming the food? Will the food be elevated to Art?

I tend to forget Tallahassee is one of the only places (I know) in Florida where there’s a culture around foraging chanterelles. Every summer, line cooks comb the oak forests and sell bags upon bags to restaurants. Mushroom enthusiasts and their families pick them in their neighbors yards and in public parks.

These are photos of me and the other PoSM founder, Tyler Lee, after hours of pickin’ at Phipps park. Back then we struggled to keep our grow rooms cold enough in the summer time so we picked chanterelles for our chefs.

Overtime I found so many spots that I could spend three days straight in the woods after a good storm. These days I only pick what I can carry in my hat and take home for dinner. I like to keep a chanterelle pin on my hat for this reason!

Picking Season starts in June so get your bug spray ready and remember to cut not pluck!

It never ceases to amaze me how much variation in form these mushrooms have. Both of the clusters Bryan is holding are the same genetically identical pioppino strain. The one on the left is a typical indoor grown cluster and the one on the right was growing outside on spent substrate where bright sun and wide humidity swings caused it to swell, crack and fade like a piece of popcorn!
