ely grass fed, fattening on grass up to December, with the spring ones a little extra hay, oats and barley (nothing else) all locally grown in the valley over the winter months. A finished Sussex bullock or heifer (at about 20 months) will weigh around 500kg live weight producing a carcass of around 300kg and produce roughly 150kg of butchered meat… enough for up to 30 people to share. We are lucky to have a small family run abbattoir about three miles up the road so there’s no stress involved for the cows. Cow Club is a strong supporter of nose-to-tail eating, and we believe a sustainable food system is one that makes the most of the whole animal. Therefore our Box of COW reflects the cut ratios that you’d typically find over the whole bullock… roughly broken down as one third prime cut, one third braising steak, and one third ground beef. One big advantage of buying our meat in this way is that we actually know where it’s has come from. When you buy supermarket beef you have no idea how that animal was raised, how it was slaughtered or even where it has come from… factories now produce our meat rather than farms! In addition to not knowing where the beef comes from, most (if not all) supermarket beef is grain fed… by grain feeding cattle rather than grass feeding it’s possible to produce a finished cow more quickly & hence make more money. However, feeding a cow grain is completely unnatural & severely impacts the quality of the meat. A natural grass fed cow has roughly a 1:1 ratio of Omega 3 to Omega 6 fat ratio… a grain fed cow has at least 10 x the Omega 6 fat content… this is VERY BAD. So grass fed beef is the way to go for not only better tasting beef but also healthier beef that has a lower overall fat content and higher Omega 3 fat ratio.
